Magic Tomato Salad
Ingredients:
4 large ripe tomatoes (preferably heirloom or vine-ripened), chopped
1 small red onion, thinly sliced
1 cucumber, peeled and diced
A handful of fresh basil leaves, torn
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar (or red wine vinegar)
1 teaspoon honey or maple syrup (optional, for a touch of sweetness)
Salt and freshly ground black pepper, to taste
Optional: 1/4 cup crumbled feta cheese or fresh mozzarella balls
Optional: A sprinkle of chili flakes or freshly chopped parsley for extra kick
Instructions:
Prepare the Vegetables:
Wash and chop the tomatoes into bite-sized pieces. Peel and dice the cucumber. Thinly slice the red onion. Tear the basil leaves into smaller pieces for a fresh aroma.
Make the Dressing:
In a small bowl, whisk together the olive oil, balsamic vinegar, honey (if using), salt, and pepper until well combined.
Combine the Salad:
In a large mixing bowl, gently toss the tomatoes, cucumber, red onion, and basil with the dressing. Be careful not to crush the tomatoes; you want them to stay fresh and juicy.
Add Cheese (Optional):
If you like, add crumbled feta or fresh mozzarella for a creamy texture and extra flavor.
Final Touch:
Sprinkle some chili flakes or fresh parsley on top if you want a little extra heat or freshness.
Chill and Serve:
Let the salad sit for about 10-15 minutes in the fridge to let the flavors meld together. Serve chilled or at room temperature.
