Sheet Pan Pork Chops with Multi-Colored Potatoes & Red Onion

Ingredients:

  • 800 g / 1.6 lb potatoes
  • 200 g / 7 oz red onion
  • 2 tablespoons olive oil
  • ½ teaspoon paprika powder
  • ½ teaspoon dried rosemary
  • Sea salt and pepper
  • 4 pork chops, approximately 200 g / 7 oz and 1.3 cm / 1 inch thick

Rub:

  • 2 tablespoons olive oil
  • 4 garlic cloves
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • ½ teaspoon paprika powder
  • Lime, juice and a few gratings of zest
  • 1 teaspoon salt
  • ½ teaspoon ground pepper

Instructions:

  1. Preheat your oven to 200°C / 400°F.
  2. Start by preparing the potatoes and red onion. Cut the potatoes into chunks and slice the onion. Place them on a sheet pan.
  3. Drizzle the olive oil over the potatoes and red onion. Sprinkle with paprika powder, dried rosemary, sea salt, and pepper. Toss everything together to coat evenly.
  4. In a small bowl, combine all the ingredients for the rub. Mix well.
  5. Rub the mixture evenly onto both sides of the pork chops.
  6. Place the seasoned pork chops on the sheet pan with the potatoes and red onion.
  7. Bake in the preheated oven for about 25 minutes, or until the pork chops are cooked through and the potatoes are golden brown.
  8. Once cooked, remove from the oven and let it rest for a few minutes.
  9. Serve hot and enjoy!
