Southern Coca Cola Cake is a beloved dessert that perfectly encapsulates the essence of Southern baking traditions. This rich, moist cake combines the unique flavor of Coca Cola with classic cake ingredients, resulting in a delicious treat that has been a favorite for generations. Whether you’re baking for a family gathering, a holiday celebration, or just because, this cake is sure to impress.

Ingredients:

Granulated sugar 2 cups
Baking soda 1 teaspoon
Salt 1/2 teaspoon
Unsalted butter 1 cup
Unsweetened cocoa powder 1/4 cup

Coca Cola 1 cup
Buttermilk 1/2 cup
Large eggs 2
Vanilla extract 1 teaspoon
Mini marshmallows 1 1/2 cups

For the Coca Cola Frosting

Unsweetened cocoa powder 1/4 cup

Coca Cola 1/2 cup
Confectioners’ sugar 4 cups
Vanilla extract 1 teaspoon
Chopped pecans (optional) 1 cup
Instructions:

Preheat your oven to 350 degrees F (175 degrees C) and grease a 9×13 inch baking pan.
Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking soda, and salt.
Prepare the cola mixture: Melt the butter in a saucepan over medium heat. Stir in the cocoa powder and Coca Cola, bringing the mixture just to a boil.
Combine mixtures: Pour the cola mixture over the dry ingredients and mix until well blended.

Prepare the wet mixture: In a separate bowl, whisk together the buttermilk, eggs, and vanilla extract until smooth. Add this to the batter and stir until combined.
Fold in marshmallows: Gently fold in the marshmallows and pour the batter into the prepared baking pan.
Bake: Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the frosting: While the cake is baking, make the frosting by melting the butter in a saucepan, and stirring in the cocoa powder and Coca Cola. Bring to a boil, then remove from heat.
